209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Delivered frozen meat was stored on the floor (between the opened washroom door and back door);
2. Opened bags with food products were stored on the floor (with card-board under bads) near the back door;
3.Cutting boards & coolers lids were stored on the floor on top of the box mice trap;
4. Rice nets were stored in the staff washrooms.
5. Cut cabbage has been stored on top of eggs in the prep. cooler.
Corrective Action(s): Do not store food items, equipment, & food related items on the floor.
All must be stored at least 6" above the floor (on pallets or shelves).Do not store food/ready to eat food on eggs;
Do not double stack uncovered food;

304 - Premises not free of pests [s. 26(a)]
Observation: Several mice droppings found near the back door, between equipment (coolers at the sushi prep.area);
Corrective Action(s): Today. All mice droppings must be cleaned and floor sanitized.
Note: Pest service available on site (4 time an year); Traps are set and empty.

Observation: Food debris, mice droppings, & grease on the floor at sushi prep. area/between a small undercover cooler and wall; between coolers;
Corrective Action(s): Clean and sanitize the floor;

Observation: The staff washroom in the back of the kitchen was been used as a storage room - rice nets;

- Press-wood shelves must be refinished (Note: It is easy to clean and sanitize);
