Observation: All cooking equipment, walls and floors in need of cleaning to remove grease and or food debris. Chairs in dining room in need of cleaning.
Corrective Action(s): Thoroughly clean and maintain these areas.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1.Stainless steel countertop in back kitchen has lifted and food debris is building up underneath.
2. Moldy silicone found along faucet of handsink and along walls at sinks in dish area.
3. Paint on walls in walk in freezer is peeling.
Corrective Action(s): 1.Throughly clean and either repair or replace so that food debris cannot build up along edge and potentially contaminate food.
2. Scrape away silicone and replace to provide a cleanable surface.
3. Scrape peeling paint off walls and refinish with a smooth and washable material.

Comments

Remove shelf that holds bin of pop bottles/cans due to it having compartments with food debris building up in it under the dishwashing counter. Place cans and bottles in containers with lids.
Bar fridge is maintaining drinks at 10-12 degrees C. Do not store perishables in this fridge until it is able to maintain foods at 4 degrees C. Repairman had been called.
All other fridges are maintaining foods at 4 degrees Celsius or colder.
Foods in warmers online are all 60 degrees C or hotter.
Dishwasher final rinse contained 100 PPM chlorine residual at the plate surface.
Quat sanitizer in spray bottles measured 200 PPM residual.
Liquid soap and paper towel at handsink.
Salad bar foods are being maintained at 4 degrees C or colder.
