Routine inspection was conducted:
- Handsinksupplied with hot and cold running water, soap.
- All coolers - prep cooler, glass cooler and under counter cooler - less than 4C
- High temperature dishwasher was working and measured at 72C at the dish surface during final rinse cycle
NOTE: Ensure that the solution is prepared before the start of the operation using one teaspoon bleach in one litre of water
- Three compartment sink is available
- Equipment maintained in clean and sanitary condition
- General sanitation satisfactory. NOTE: Hard to reach areas close to three compartment sink needs better sanitation
NOTE: The kitchen is not in operation for a few weeks due to lack of kitchen staff.
