- All sinks are fully equipped.
- All coolers at 4C or below.
- All freezers at -13 to -16C.
- Bleach sanitizers available in spray bottles and in buckets measured at 100-200ppm with test strips.
- High temperature dishwasher reached 71C or above during the final rinse.
- Temperature logs are maintained for walk-in cooler, walk-in freezer and the dishwasher - Good.
- Hot held miso soup & rice at 60C or above.
- Ice machine in sanitary condition.
- Monthly pest control by ORKIN. No rodent activity reported by the company as per the manager. No signs of pest observed at the time of inspection.

*Start to record the time tempuras are transported to sushi station. Ensure they should be discarded after 2 hours in ambient.
*De-clutter staff washroom area. Empty containers and pop cans are discarded on weekly basis as per the manager.
*Remove dust build up along the pipes & ceiling fan in the dishwashing area.
*Observed damaged/old plastic inserts in use for sandwich prep cooler. Replace them with new ones.
