Observation (CORRECTED DURING INSPECTION): -Cutting board noted stored next to freezer with edge stored on the floor.
-Large pot noted in code 307 has food debris on top and on lid
Corrective Action(s): -Store clean dishes in a clean location (ie. on shelving or dish racks) and not on the floor. Re-wash and sanitize cutting board and store in appropriate location
-As per code 307, remove this pot from the facility. Sink is not large enough to allow for proper cleaning of this item.

Observation: Very large pot present. This pot is too large to be fully submerged in the sink. Furthermore, food debris noted on lid and at top of pot which indicates pot is not capable of being cleaned properly.
Corrective Action(s): Remove this pot from the facility and replace with one that is suitable for the size of the dishwashing sink and capable of being fully submerged to enable proper cleaning. Correction date: Oct. 3/17

Comments

-General sanitation of premises is satisfactory although some grease noted on floor near walls around stove. Ensure sanitation procedures are sufficient in frequency and level of detail so as not to allow accumulation of grease/debris.
-Handsink supplied with liquid soap and paper towel.
-Bleach sanitizer solution present in dishwashing sink (200ppm chlorine). Staff were knowledgeable about manual dishwashing procedures. Sign posted at sink.
-Wiping cloth stored in bleach sanitizer solution (100-200ppm)
-Sliding door cooler was at 3C
-Undercounter cooler was 4C
-Walk-in cooler was 4C
-Chest freezer was -15C
-Hot holding of food in front display was 64.9C - 73.4C. Probe thermometer present for checking temperatures. Ensure temperature of food is hot holding is being checked/monitored throughout the day. Temperatures should be recorded.
-Ice scoops stored outside of ice machine with scoop portion in clean container.
