Observation:
1) Food items were not covered and were not protected from contamination in the following areas:
- Chest freezers in the back room
- Dry storage
- Chest freezer in the dry storage area
- Walk in cooler

2) Potentially hazardous food (meat) stored above potatoes in the walk in cooler
Corrective Action(s):
1) All foods must be covered to protect from contamination. You may use aluminum foil, plastic wrap, or a food grade container with tight fitting lid. Correct this by May 27, 2021.

2) Ensure that meat products are stored below other food items to prevent cross contamination. To be corrected by May 27, 2021

Observation (CORRECTED DURING INSPECTION): Boxes of fish fillet left outside at room temperature to thaw
Corrective Action(s): Boxes moved to walk in cooler during inspection. Ensure all staff members are properly trained on thawing procedures

Observation: 1) Chest freezer in dry storage area had broken door on the inside
2) Mechanical, chemical dishwasher was unable to reach 50 ppm chlorine concentration
Corrective Action(s): 1) Repair door on chest freezer as broken door may lead to improper temperatures in the freezer and potential ice build up. To be corrected by: August 27,2021
2) Ensure mechanical, chemical dishwasher is able to reach 50 ppm chlorine concentration. Currently, all meals are takeout only and operator is providing only single use containers. Use 3 compartment sink with bleach as a sanitizer in the meantime for all dishwashing purposes until dishwasher is repaired. To be corrected by May 27, 2021
