402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Upon arrival of Environmental Health Officer the only employee was observed to handle cash machine and touch pin pad, sanitize gloved hands with hand sanitizer then proceed to make a beverage.
CORRECTED DURING INSPECTION. Employee removed gloves and properly washed hands after discussion with Environmental Health Officer for each beverage preparation.

Corrective Action(s): Due to only one staff member present the staff tried to save time by sanitizing gloves between handling contaminated surfaces and preparing beverages. Please ensure staff remove gloves and wash hands between handling contaminated surfaces and beverage preparation. Remind all staff that sanitizing gloves is not acceptable substitution for proper hand washing.

Observation: Fruit flies observed throughout facility - specifically in back area surrounding mop and container of used cloths.

Observation: Currently facility is using container to store used rags for one week at which time the rags are removed for cleaning.
Mop bucket filled with water observed during inspection.

Corrective Action(s): Ensure no pooling/standing water. Dump all mop water and clean spills as soon as possible.
Discuss container of used cloths with Pest Technician. Find an alternative (tight fitting lid, tied garbage bag, etc.) solution for cloth storage to eliminate fruit fly problem.

- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm Chlorine at the dish (46 degrees Celsius at the plate)
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- First In First out and date stamping methods observed in use
- All food items covered in cooler and freezer units
- Pest proof containers for all dry storage items
- Scoops placed external to dry storage bins
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Staff Personal items kept separate from kitchen equipment

COVID-19 WORKPLACE SAFETY PROTOCOLS:
- WCB Safety plan posted and available on site for inspection
- Staff wearing masks in patron area and back kitchen area
- Plexiglass partitions in place
- 2m physical distancing of patrons in place; floor stickers both inside and out observed, traffic flow controlled, one way traffic
- Maximum seating of no more than 6 patrons in place
