***New meat slicer installed in premises. Manager stated meat slicers are being installed in all subway locations. Sandwich meat will no longer be supplied pre-sliced. Staff have been trained on how to use the slicer. Manager stated they will be slicing sandwich meat in February.
Hot holding meat balls at 63c
Manager stated staff are aware not to place meatballs into the hot holding bath until the unit has warmed up to properly hold at a minimum of 60c.
All rubber stoppers in place at the 3 compartment sink. All sinks observed holding water.
Quat sanitizer dispensed at 200ppm at sanitizing sink
