Observation: Food debris and grease accumulation obesrved underneath and in between prep coolers and cooking equipment in main cook line.
Corrective Action(s): Ensure to pull out all moveable equipment during cleaning such that hard to reach areas can be properly cleaned and sanitized. This should be done on a weekly basis at minimum.

Comments

- All hand washing sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm in several spray bottles and from main dispensing unit. Ensure spray bottles are refilled before they run out.
- High temperature dishwasher reached 76C at dish surface during rinse cycle - good.
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- Hot holding units were measured to be at 60C or hotter
- Hot held food items at buffet table were measured to be at 60C or hotter
- Cold held food items at buffet table were held on ice, temperatures ranged from 3C-8C. Only small portions were held at buffet table; ensure turnover of food items is every 2 hours or sooner.
- Food storage practices satisfactory - all food stored off the ground and properly covered
- Dry storage areas were organized and maintained in sanitary conditions.
- All equipment maintained in sanitary conditions (ice machine, ice cream machine, meat slicer, interiors of coolers and freezers, ventilation canopy, etc.)
- Accurate thermometers available
- Temperature records well maintained and up to date
- General sanitation good
- No signs of pest activity noted
