Follow-up inspection to report #YTAN-CBMRC6.
- Pest-proofing measures have been implemented. All potential entry points and holes in perimeter walls have been sealed. Flour bags are now stored off the floor, with a barrier built in to prevent pests from chewing through the bags. *If you are still noticing that bags are being chewed through, then proper containers with lids will be required for storage of flour bags.
- Deep cleaning has been completed. Facility has been re-organized, all food and food-related equipment stored off the floor and away from walls. Floors underneath equipment can be easily cleaned and monitored for any rodent droppings.
- Pest control contract is still in place.
- Back screen door has been repaired such that there are no holes or gaps. Back door was also closed at time of inspection.
- Bleach sanitizer solution available in spray bottles at 200 ppm for sanitizing surfaces. *Reminder to mix only 1/2 teaspoon of bleach per every litre of water.
- Reviewed manual dishwashing procedures with staff in the 3-compartment sink. Ensure dirty dishes are only stored in the sink designated for washing with soapy water, and not stored in all 3 compartments.
- Hand sink in staff washroom properly supplied with hot and cold running water, liquid soap, and paper towels. *If paper towels tend to get stuck in the dispenser, replace dispenser.
- Pizza dough is no longer being proofed in the store's laundry/storage room. *Operator has cleared space in the storage room with freezers and pizza boxes for proofing pizza dough - OK. Ensure no handling of pizza dough is done here - only storage of pre-made dough in pizza pans for proofing to be done in this area.
