- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm throughout. Ensure to change solution in buckets when solution becomes visibly dirty/cloudy.
- High-temperature dishwasher reached 75C at dish surface during rinse cycle
- All coolers were measured to be at 4C or colder
- Freezer measured to be at -22C
- All hot held food items were measured to be above 60C
- Accurate thermometers available
- In-use utensils stored in ice between uses - good. **Ensure time-tracking is in use (times should be updated each time).
- Food storage practices good
