Observation (CORRECTED DURING INSPECTION): Dishwasher not obtaining proper temperature to achieve sanitation. Indicating guage shows 75 C as final rinse temperature. Indicating guage should read 82 C and plate temperature must be at least 71 C. Operator indicates service technician coming in this week. Operator called again and technician coming today.
Corrective Action(s): Until unit is achieving proper temperatures make sure to add a manual sanitizing step (fill sink and add 1 to 1 1/2 cups bleach) and add washed dishes to this sink, keeping in sink for 2 minutes for minimum contact time.
This will be reviewed in 1 week.

Comments

Cooling units below 4 C. Make sure to use deep stainless steel inserts for cooling table in front. This will improve temperatures for all foods in this unit.

Make sure to have liquid soap and paper towels at all handwash stations at all times.

General cleanliness in premises is much improved. Keep this up.
