Observation (CORRECTED DURING INSPECTION): Leftover rice from yesterday was kept out at room temperature. Staff said it was out when they came in this morning. Rice was discarded.
Corrective Action(s): Do not store rice at room temperature overnight! Store it in the fridge.

Observation: Some mice dropping noted in the back kitchen by the heater.

Observation: The flooring that was redone looks great. However, the section under the prep cooler and sushi case was not refinished. There's a lot of grime under this area.
Corrective Action(s): Look into cleaning and refinishing the flooring under the sushi case as well.

-200ppm Bleach solution is available in spray bottle for sanitizing counters. Us
-Miso soup was at 79 degC
-Dishwasher rinse was 76 degC
-Fish for sushi is purchased from Asia Global Trading Ltd located at 2750 Ingleton Ave, Burnaby. On the invoice it indicates that "Frozen fishery items are frozen and stored of -20c for a minimum of 168 hours in a freezer".


**KEEP MONITORING THE WHITE FRIDGE IN THE KITCHEN THAT'S USED TO STORE MAINLY VEGETABLES. THE TEMPERATURE MUST BE UNDER 4 DEGC AT ALL TIMES. DURING THE INSPECTION IT WAS 8 DEGC BUT THE THERMOSTAT WAS ADJUSTED DURING THE INSPECTION. ALL FRIDGES SHOULD HAVE THERMOMETERS.**

**BUY PROPER PAPER TOWELS FOR THE 2 DISPENSERS IN THE KITCHEN. THE ROLLED ONES DON'T WORK IN THESE DISPENSERS.**
