Observation: Walk-in cooler registered 10 degrees C at the time of inspection.
Corrective Action(s): All potentially hazardous food items must be discarded. You may store recently delivered products in the upright freezer or another cooler that is working at 4 C or below.
Repair the walk-in cooler so that it is capable of maintaining all foods items at 4 C or below (Immediately).

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings noticed on the floor underneath dry storage shelves, in the kitchen behind equipment, behing the deep freezers and in the walk-in cooler.
Corrective Action(s): 1. Hire a licensed pest control company to set up more traps and exclusion work. All entry holes and gaps on the exterior and interior of the building must be patched to prevent entry of mice.
2. Clean to remove all mice droppings and sanitize floors in all areas of the restaurant including underneath and behind all equipment, in the walk-in cooler and in bar area. All food and equipment storage shelving including shelvinng near the washroom must be cleaned and sanitized.
3. Submit an up to date inspection report from a licnesed pest control company outlining correction actions taken and to be performed to prevent mice entry and harborage.
4. All food must be stored in bins with tight filling lids.
5. Discard all foods that was left open overnight. (immediately).

Observation: Mice droppings noticed in most floor corners of the premises.Build-up of food debris and grease noticed in the kitchen preparation areas Broken section of the drywall in the walk-in cooler found to be mouldy. Slime build up noticed in the middle section of the walk-in cooler.
Corrective Action(s): Thorough cleaning and santizing required throughout the kitchen, storage areas and bar. Clean up milk spils in beer storage section facing the bar. Clean and santiizer all equipment, bins and shelving(Immediately).

Closure order issued.The restaurant and bar must be closed to the public immediately until all of the issues identified
above are addressed and rectified.

The following deficiencies must be corrected prior to opening.
1. Ensure that there is no gap around the walk-in cooler door to ensure proper refrigeration
2. Remove all equipment, freezers and shelves and seal/patch any holes that may provide rodent harborage
3. Clean the shelving in the sliding door cooler to remove spilled food. Clean the door rails.
4. ABSOLUTELY NOTHING TO BE STORED ON THE FLOOR. ALL ITEMS, BOXES, FOOD PRODUCTS MUST BE STORED ON SHELVES AT LEAST 6 INCHES OFF THE FLOOR.
5. REMOVE ANY ITEMS NOT REQUIRED FOR RESTAURANT OPERATION FROM THE PREMISES
6.Check and service the coolers that are not maintaining 4 C or below.
