Observation (CORRECTED DURING INSPECTION): Binigoongan (pork in shrimp sauce), bbq pork, and pancit found to be held <60C Binigoongan measured 43.9C internal and pancit measured 39C
Corrective Action(s): Discarded. Discussed with staff that they must monitor hot holding temperatures of food using a probe thermometer. When products are <60C the hot holding unit must be adjusted accordingly to ensure hot food is kept >60C at all times.
Highly recommend operator to train staff to take temperatures every 2 hours.

Handsink was accessible and stocked with liquid soap, paper towels, and hot/cold running water
All hot potentially hazardous food was kept in the hot holding unit - good
Operator must provide most recent pest control service report to area inspector ASAP

note: operator has changed layout of dining area and buffet area. buffet has been moved to south side of the room against the wall to the kitchen. Handsink has also been relocated to this wall.
No objections to the change, HOWEVER, operator must submit plans to change layout of the facility prior to any work being conducted in the future.
