A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -17C; hot holding units 60C or hotter; and thermometers present. A new sandwich assembly cooler was purchased as the compressor on the old unit broke.
- High temperature dishwasher had a rinse cycle temperature of 74.9C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach present for sanitizing. [Cl2] in spray bottle was 200ppm.
- A new pair of disposable gloves are placed on and discarded after completing a task. Proper use of gloves being done.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with raw proteins stored separated from RTE foods; and food stored 6" off the floor on shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy is clean and absent of accumulated grease. No signs of pests.
- FoodSafe certified staff present.
- The microwave sits on a white, painted, wood platform.
- All in order.
