Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: Plastic containers of garnishes and toppings found sitting on top of ice. not all sides of the food containers were covered in ice.
Corrective Action(s): Products were submerged in ice. Ensure that all cold potentially hazardous products are kept fully submerged in ice to keep them < 4 degrees C

Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: pop wand's unused lines found to have mold growth at the wand
Corrective Action(s): Clean the pop wand on a more frequent basis. Ensure that the unit is sanitized to prevent mold growth.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher unable to reach 71C at the dish surface after multiple runs of dishware. Dishwasher was drained then refilled. Temperature at dish surface measured 71C.
Corrective Action(s): Dishwasher must be drained and refilled every 2 hours, confirm on gauge that the final rinse temperature reaches 180F
Technician called to repair dishwasher

Correction order issued to repair dishwasher. Rinse temperature must meet 180F at the manifold gauge and 71C at the dish surface as required for facility operations. Failure to do so may result in the issuance of violation tickets and/or facility closure orders.
