Comments

-In the event of a renovation or change of ownership, a commercial grade ventilation hood must be installed to comply with the current requirements.

All coolers were < 4 C.
All freezers were < -18 C.
Hand sinks supplied with hot and cold water, soap and paper towels.
Bleach was at 100 ppm.
Dishwasher final rinse cycle reached 74 C at the plate level.

Follow up inspection tomorrow.
