A follow-up inspection was conducted, the following observations were made:
- Consultation with agency that approved FSP and other EHOs regarding the holding of cooked bacon was done. It was found that the cooking process described and followed by the staff is safe. The bacon is cooked to a state which it will "shatter" when dropped, and it must be able to stand upright when held. The water level is low and salt level is high. Continue following the company's prescribed cooking and holding process for bacon.
- The temperature of the cooked onions and mushroom was 157F.
- All violations have been addressed.
