A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -17C; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher's rinse cycle had [Cl2] of 50ppm.
- Improvement in storage practices. Raw proteins are being stored on the lowest shelves, below veggies and RTE foods. All foods stored in food grade containers; covered; stored in groups; and stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- Ice bin, in front service area, was clean and absent of any items stored in the ice.
- General sanitation level is satisfactory, other than the mentioned areas. Ensure the floor under the deep fryers are cleaned every night, as accumulation of food and grease found due to daily use.
- No signs of pests.
- FoodSafe certified staff present.
- Shellfish tanks are clean and absent of unwell/dead shellfish.
- All surfaces are durable, smooth, sealed, cleanable, and in good working order.
**A follow-up inspection to occur on Dec. 12/19, or later, to ensure all cleaning has been completed.** |
