- Operator demonstrated cooling methods: hot potentially hazardous foods will be cooled in ice bath in back prep kitchen; thermometer available on-site for verification --> ensure you stir occasionally to cool from hot to 20 C within 2 hours.
- Raw products (meats, mushrooms) have been rearranged and now will be store on prep cooler side closest to bar area; the other side of prep cooler will be designated for ready to eat garnishes, salads etc. Inserts were < or = 4 C.
- No sous-vide apparatus on-site, however, duck still available on menu. Operator to remove all sous-vide products + duck from premises & menu by Dec 21, 2018. If you wish to reconsider reinstatement of these products, you must achieve two consecutive low hazard ratings during your routine inspections; a detailed food safety plan must be submitted to our office for prior approval.
- Back walk-in cooler shelves have been cleaned, but still some build-up observed on green rack --> cleaning required. Eventually you will have to sand and resurface the metal storage rack too.
