Observation: Soiled wiping rag on kitchen cooking line, no detectable sanitizer.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Comments

New produce obtained - in small volumes to maintain product quality due to reduced meal sales.
Reviewed cooking procedures - all foods when cooked must be cooked completely 74 C internal temperature.
Food inserts no longer double stacked in top compartment of prep cooler.
All food hot holding conducted in steamer unit and front hot holding display.
All wiping rags in use stored in 200 ppm Quaternary Ammonia sanitizer solution.
All required cleaning has been completed.
Take-out drink cups have been removed from front counter and located away from customer access.
