Observation: More detail is required in written food safety plans regarding cured meat processing (partial plans/calculations submitted at last inspection). In particular, written details are required on quantities of curing salt to be added per meat weight, concentration of nitrates in curing salt, steps for refrigerated curing/drying (including time period for this step), and final cooking processes.
Corrective Action(s): Submit additional details by the end of this week (3rd September 2017).

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Meat slicer had not been cleaned from previous day's use. Significant amount of meat residue observed on blade and guards.)

*Meat slicer was maintained in clean condition at time of inspection. Continue to ensure staff clean and sanitize equipment after use.
*Prep line cooler closest to entrance door was measured at 4 - 4.7 C during inspection. Unit has been serviced. Ensure this cooler maintains food at 4 C or colder - monitor on a daily basis. Ensure temperature logs are kept.
