Observation (CORRECTED DURING INSPECTION): Food preparation was taking place in the dish pit at the same time as dishwashing. Discontinue this practice. A separate area should ideally be available for food preparation.

Comments

-Renovations have been completed as per the submitted plans, with one exception: the nitro machine has not been installed yet. All surfaces are smooth and easy to clean.

Reviewed with the store manager how the new smoothie machines are sanitized.
Time tracking for condiments is recorded on a tablet. Ensure that staff are washing their hands after using the tablet.
Temperature records were up to date.
Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached 74 C (minimum 71 C) at the plate level.
Quats sanitizer was at 200 ppm.
No evidence of pests. A professional pest control company is onsite regularly. Ensure that their recommendations for structural repairs are followed.
General sanitation was satisfactory.
