Observation (CORRECTED DURING INSPECTION): 1. Prawn tempuras, yam tempura, and cut vegetables noted at room temperature with no time tracking. Staff indicated food has been at room temperature for a few minutes only. Temperatures ranged from 24.1oC to 34.8oC.
2. Walk-in cooler is measured to be 8.7oC (air temperature). Food temperatures are measured to be 7.1oC for salmon pieces and 7.2oC for tofu. Both items were in cooler since last night. No temperature log available for review.
Corrective Action(s): 1. Potentially hazardous foods must be stored properly -- preferably under 4oC or over 60oC. If operator wishes to store food at room temperature time tracking must be implemented. 3 containers of tempura and 1 container of cut vegetables discarded.
2. Do not store any potentially hazardous foods at room temperature until cooler is adjusted/fixed.
