Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
1. Ventilation canopy has heavy accumulation of grease, grime and debris.
2. Large veggie slicer observed to be stored in an unsanitary condition on a shelf.
3. Equipment/tools stored in an unsanitary container across the prep cooler that is not used for cold storage.
Correction:
1. Clean the baffles of the ventilation canopy.
2. Clean and sanitize large veggie slicer. Ensure slicer is properly cleaned and sanitized before storing it away.
3. Clean all equipment/tools in the container across the prep cooler that is not used for cold storage.

Follow-up Inspection:
- Cleaning has improved significantly in facility, especially in the following areas:
Ventilation canopy baffles.
Ceiling panels.
Large veggie slicer.
All food and equipment storage shelves/units.
Outside and under equipment.
Inside all coolers.
Fan cover in walk-in cooler.
Walls and floor.
Hard to reach areas.
- Plastic drop sheets in walk-in cooler have been removed entirely.
- Hand sink was unobstructed and fully equipped with liquid soap, paper towels and hot/cold running water.
- Sponge holder at 3-compartment sink has been removed.
- No double stacking of baskets observed. Foods stored in a pest proof container with a lid may be stacked on top of each other.
- No open bags of food observed in the dry storage closet.
- Chemicals are now stored on a separate shelf away from any food.

Please ensure the following:
Install a light cover for the light fixture just above the cookline.
Review proper steps of manual dishwashing and hand washing with staff.
Post a sign at the 3-compartment sink for how to do proper manual dishwashing.
Post a sign at the hand sink for the proper steps of hand washing.
Review the cleaning schedule with the entire staff for daily, weekly and monthly cleaning.
