All coolers were maintaining potentially hazardous foods at 4 degrees C. or colder. Walk in cooler very well organized. Walk in freezer was -22 degrees C. General sanitation overall good. Dishwasher final rinse at plate surface reached 72 degrees C. Sanitizer buckets for wiping cloths measured a 200 PPM quat residual. Liquid soap and single use towels at both handsinks. Dry storage well organized with eveything being stored off the floor. No sign of pests.
