Observation (CORRECTED DURING INSPECTION): At the time of inspection no bleach sanitizer solution avaiable for use in front food preparation area. Back food preparation area had limited amount of 100ppm bleach sanitizer solution. Wiping cloths not stored in solution when not in use.
Corrective Action(s): Ensure during operation a 100ppm bleach is available for use in the front and back. Store all wiping cloths in this solution when not in use.

Hand sink provided with liquid soap and paper towels.
Dishwasher registers 75 degrees C at the plate surface during the final rinse cycle.
Both freezers at or below -18 degrees C.
Sliding glass door cooler at 3 degrees C.
Preparation cooler inserts at or below 4 degrees C. Lower section at 3 degrees C.
Soup hot held above 60 degrees C.
No soups observed cooling in large quantities on the counter.
Turkey not being slow cooked in hot water tank/mop sink room.
Beverage cooler at 2 degrees C.
Display cooler at 3 degrees C.
FOODSAFE requirements met at time of inspection.
Permit to operate posted in plain view of the public.

Temperature monitoring records for the month of March not maintained. Monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse temperature.
