Observation (CORRECTED DURING INSPECTION): All sanitizer buckets storing clean wiping cloths had 0 ppm Quats residual detected. Staff stated buckets are filled in the morning and not changed throughout the day.
Corrective Action(s): Sanitizer solution in green buckets for storing clean wiping cloths must be changed/refreshed every 4 hours at a minimum. Used wiping cloths are placed into red sanitizer bucket - OK.

Observation: A significant number of fruit flies present in the dry storage area.
Corrective Action(s): Continue with pest control, ensuring to replace traps regularly. Also ensure dry storage shelves and food storage bins are clean and properly covered.

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher sanitizing rinse cycle achieved greater than 50 ppm chlorine residual, detected at dish surface
- Quats sanitizer solution available in spray bottles and from dispensing unit at 200 ppm - good
- All coolers were measured to be at or below 4C
- Walk-in freezer measured to be at -18C
- Hot held items measured to be above 60C
- Food storage practices satisfactory - all food stored off the ground and covered
- Ice machine observed to be clean and free of mould/mildew build-up
- Ventilation canopy also maintained in sanitary condition
- General sanitation satisfactory. *Note: Ensure only cleaned and sanitized knives are stored in knife rack.
