Observation (CORRECTED DURING INSPECTION):
Packages of cheese curds found in a container by the fry station were passed it's use-by sticker (May 26/16). These foods are unsafe to consume as they have been sitting at room temperature for an unknown amount of time.
Corrective Action(s):
Discard the cheese curds and retrain staff to check the use-by stickers throughout the day. Staff discarded the cheese curds during the inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The freezer door gaskets for the beef burger freezer and the fish/chicken freezer were damaged. The doors were unable to close and seal properly, this was causing ice to build up and the compressor to work more.
Corrective Action(s):
Replace all damaged door gaskets with new ones.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; hot holding units were above 60C; thermometers present; temp. logs recorded daily.
- Quats sanitizer in spray bottle was 200ppm; and [Cl2] in cloth buckets was100ppm.
- Low temperature dishwasher had [Cl2] of 100ppm during the rinse cycle.
- Hand washing sinks had running hot and cold water, liquid soap and paper towels.
- Sanitation level is good. No signs of pests.
- Food storage practices done correctly. Foods stored in food grade containers; covered; date coded; in groups with animal proteins on lowest shelf or away from RTE foods; and 6" off the floor.
- Food handling practices done correctly. Staff use utensils to handle foods; disposable gloves used for one task and then discarded; and hands washed adequately.
- FoodSafe certified staff present.
