Chemical dishwasher achieved 50 ppm chlorine residual
Bleach sanitizer in rag bucket by dish pit area at 100 ppm chlorine residual. Ensure to keep rags in this bucket when not in use.
Walk in cooler: 2 deg C
Prep cooler across stove at 3.9 deg C (inserts half filled)
