Observation: Low levels of fruit flies observed in the following areas of facility:
A) Salad prep, ice cream freezer area;
B) Dish pit area;
C) Bar;
D) Ice machine room;
Corrective Action(s): Continue to strategize methods and actions to reduce or remove fly population. Focus on above key areas and:
B) Fix water leak at pot sink; Thoroughly clean and keep dry as possible floor and hard to reach places; Slip matt must have a better cleaning protocol - the underside of the matt IS a breeding ground;
C) Fix bar sink tail pipe connection and clean this area; Clean under expresso machine matt, and clean up the ice sink.

Observation: Most primary areas of the facility good to very good (except the dish pit), but several secondary areas need added attention to the cleaning process and/or schedule. These include:
- ice machine and dry food storage room;
- keg cooler floor;
- wall and area around the fire supression control panel (directly above clean dish/utensil shelves;
Corrective Action(s): Clean up these areas and ensure they are included in the regular cleaning schedule as discussed.

Comments

As discussed remove the wooden box used to store the ice scoop at ice machine. Clean up the exterior of the unit and make sure no wood flakes are left to fall in the ice.
