Wiping cloth is stored in 200ppm chlorine solution. Used for wiping counters etc.
Two compartment sink manual utensil cleaning: wash, rinse, sanitize (100-200ppm chlorine), air dry. Staff on site is aware of procedures - good.
Premises well organized. Some worn surfaces (ie cupboard door edges) can be sealed so surface is easy to clean.
Monitor for pests as part of your pest control plan.
