Observation: 1) The paper towel in the paper towel dispensers at both sinks in the front is not dispensing as it should.
2) Vegetable cooler is at 14 degC. Mostly non-PHF's are being stored in this cooler. The bottom bins and base are broken or have cracks in them.
Corrective Action(s): 1) Replace the both paper towel holders with ones that work.
2) Replace the cooler. DO NOT STORE POTENTIALLY HAZARDOUS FOODS IN THIS COOLER. MOVE ALL CUT VEGETABLES INTO ANOTHER COOLER.

Observation: The flooring under the sushi cooler needs to be refinished.
Corrective Action(s): Operator is planning on replacing the sushi cooler and will refinish the flooring at that time.

Observation: There is a garbage bin and large plastic container (that doesn't fit inside the sink) being stored in the back kitchen when these are not required for the operation.

-200ppm Bleach solution is available in spray bottle for sanitizing counters. DON'T ADD SOAP TO THE BLEACH SOLUTION.
-Miso soup was at 93 degC
-Dishwasher rinse was 75 degC
-Operator has refreshed his FS level 1 (Expiry is 2024)
-Temperature logs are being maintained
