Observation (CORRECTED DURING INSPECTION): Mouldy purple onions found in the unplug chest freezer outside.
Corrective Action(s): Discarded mouldy onions. Ensure to go through products and discard mouldy ones.

Observation (CORRECTED DURING INSPECTION): Observed operator mixed cooked rice with veggies (probed prior to mixing and rice was at 65C), then placed a lid on top to store away in the walk-in cooler.
Corrective Action(s): Directed operator to cool food properly using shallow metal containers to cool until food reaches room temperature (~20C) in 2 hours, then complete cooling in walk-in cooler.

Observation (CORRECTED DURING INSPECTION): 1) Wet wiping clothes left on the counter after use. 2) Brown sauce like stain noted on the meat slicer.
Corrective Action(s): 1) Directed operator to store wet wiping clothes in 100ppm bleach sanitizer between uses. Prepare a container for sanitizer use as discussed previously. 2) Properly take apart the unit and fully clean and sanitize the meat slicer after use. Recommend placing a bag over the slicer to prevent contamination when using the prep table.

Observation: Mice droppings identified behind tzatziki mixture, under food prep table and under dishwashing sinks as shown to operator.
Corrective Action(s): Please remove droppings, clean and sanitize the affected areas.

Observation: Food debris noted behind cooking line (floor to wall), floor under prep tables (kitchen and cooking area), dust on kitchen ceiling and debris on the floor of bar area. Food debris noted on the condenser of undercounter prep cooler. Counters also seem dusty (bar and kitchen). Water pooling on kitchen floor.
Corrective Action(s): Remove all food equipment, and conduct a deep clean by follow up inspection.
