Observation: Under the counter cooler in salad prep area is missing a wheel. Cooler is tilted and this can lead to cross contamination of foods.
Corrective Action(s): Repair cooler wheels and ensure cooler is positioned properly.

Observation: Lighting cover is missing/broken in back prep area in kitchen.

Comments

Routine inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
All coolers are 4c or below.
All coolers are equipped with thermometers.
Freezers at -18c.
Note: Under the counter freezer in cooking line was found at -8c. There were no foods found in this freezer at this time.
Temperature logs is available.
No hot holding units were being used during time of inspection.
Thawing of food items is being done under cold running water.
Foodsafety plan is being followed.
Quat sanitizer found at 200ppm concentration for all food contact surfaces.
Dishwasher reached 71c at dish level for rinse cycle.
Note: New Ecolab dishwasher has been installed.
Overall sanitation is adequate throughout kitchen.
Pest control is in place.
Routine pest inspections are conducted by Steritech.
No pest issues noted except for flies in back area.
Contracted pest control company is working to eliminate issues.
Note: copies of last two pest reports were provided to Environmental Health Officer during time of inspection.
Employees observed to be wearing proper protective wear.
Employees observed to be washing their hands between preparation periods.
Employees onsite have valid foodsafe certification.
