303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): * Sanitizer was not avaible/set up for use on food contact surfaces during operation. There were wiping rags found on counter and hanging on sink. This is unsanitary and not acceptable practise. Operator has been told on numerous occasions to provide ready to use sanitizer at all times during operational hours
Corrective Action(s): * Again ensure that ready to use sanitizer(eg. household bleach solution at 200 ppm) is available at all times during operational hours. This is a requirement in order to be able to sanitize food contact surfaces through out the day.

209 - Food not protected from contamination [s. 12(a)]
Observation: * Some diced tomatoes were found in walk-in cooler uncovered and not protected from contamination. These were directly under compressor in cooler and compressors can drip water onto food and contaminate the food.
Corrective Action(s): * Ensure that food is covered in storage areas and protected from contamination. These tomatoes had to be discarded.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Some build up and grime noted in kitchen areas under food equipment that requires more frequent cleaning attention.
Corrective Action(s): * Ensure that all areas under food equipment are cleaned and maintained. Reorganize all shelves particularly in back areas and maintain.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: * Dishwasher was not working today.
Corrective Action(s): * Repair dishwasher immediately and maintain. In the interim use the 3-compartment sink method of cleaning/sanitizing dishware.

* Freezers were -18'C or colder
* Sanitizer was not ready to use at time of inspection and operator had to set up (bleach solution at 200ppm)
* Dishwasher final sanitizing rinse was not working. Operator to call for service. In the interim operator to use 3-compartment sink method of cleaning/sanitizing food equipment
* Monitoring records were available but not up to date.
* Cleaning and reorganization is required to remove build up under equipment and organize shelves and maintain in sanitary condition
