302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): One bucket of quat sanitizer solution was too strong - test strip indicated concentration was over 400 ppm. Valve for dispenser was turned off and staff had manually mixed the sanitizer solution. Corrective Action(s): Ensure valve for dispenser stays on at all times, quats should be dispensed at 200 ppm. Staff changed solution at time of inspection. Violation Score: 5 401 - Adequate handwashing stations not available for employees [s. 21(4)] Observation (CORRECTED DURING INSPECTION): Handwashing sink in dough making area was used to store dirty equipment at time of inspection Corrective Action(s): Ensure all hand washing sinks are freely accessible for hand washing only.
