Observation (CORRECTED DURING INSPECTION): Curry sauses (red and green) on grill observed at 30 35 C. Small volume.
Corrective Action(s): Discussed with operator. He will ensure these food products will be maintained above 60 C at all times. Recommended to operator to use ice bath at end of rush to get these products cooler quickly prior to placement in walk-in cooler. Alternatively, these products should be discarded after lunch or dinner rush.
