Observation: An opened bag of pepperoni stored in stand up freezer was fully covered in thick slushie ice that was built up in the freezer. Since the ice water could be contaminated, making the frozen pepperoni in direct contact with this slushie ice unfit for human consumption.
Corrective Action(s): Staff stated that they will defrost the freezer and throw out the opened bag of frozen pepperoni.

Observation: *REPEATED VIOLATION*
3 compartment sink is used for manual dishwashing. However, as per the staff, 2 drain plugs have been misplaced.
Corrective Action(s): As discussed and demonstrated during last routine and follow up inspections, to conduct manual dishwashing and to ensure adequate cleaning and sanitation of food contact surfaces, you should have 3 drain plugs on site and staff should know how to conduct the manual dishwashing. If the dishes are not cleaned and sanitized properly, it would increase the risk of potential food contamination.

- Train your staff about proper manual dishwashing steps - wash, rinse, sanitize and air dry.

Observation: Operator has replaced the screen door with a new one but there is still some gap underneath the door that could be a potential entry point for rodents.
Corrective Action(s): Seal the gap to prevent rodent entry into the facility.

1. Thick grease build up observed on the vents in the corner side.
2. All freezers have thick ice build up.
3. Back storage room is cluttered and unorganized.
4. Oven trays had build up of food debris.
5. Dirt/grease/mould spots observed on ceiling of walk-in cooler.
Corrective Action(s): Ensure that the kitchen and equipment are cleaned/serviced regularly.
1. Clean the vents.
2. Defrost/service the freezers regularly to prevent ice build up.
3. Organize the back storage room and clean it regularly.
4. Staff stated that oven trays are cleaned every 4 days and was cleaned during routine inspection.
5. Clean the ceiling of walk in cooler and remove any build up.

Corrective Action(s): Ensure that in operator's absence, at least one staff on duty has FOODSAFE level 1 or equivalent. Please email a copy of FOODSAFE Level 1 registration for at least one staff by June 27, 2022.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Front prep cooler at 1C
- Front freezer (x2) at -11C and -9C
- Front chest freezer at -19C
- 2x chest freezers in back kitchen below -18C
- Walk in cooler at 2C
- Cooked rice (sweetened) were stored at room temperature and recorded at 30C. Staff stated that the rice was prepared 45min ago and left for cooling prior to storing them in cooler.

Storage:
- Food storage practices have improved as compared to last routine inspection.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle (x2) available and the concentration of bleach noted at 200ppm.
Use 1 teaspoon bleach in 1L of water to make bleach solution.
- 3 compartment sink used for manual dishwashing.

- Professional pest control company conducts routine checks.
- Back screen door has been replaced with a new one. Good

Administrative:
- Operating permit was posted in a conspicuous location.

Note: General improvement noted in facility operation and maintenance. However, same violations have been repeating every routine inspection. Train your staff about safe food handling practices and sanitation procedures. Please be advised that enforcement action will be conducted if similar violations are noted during next routine inspection and would include issuance of correction/closure order, fines, violation tickets etc.
