Observation (CORRECTED DURING INSPECTION): Paper towel in the dispenser in the main prep area stuck. Fixed at this time.

Observation (CORRECTED DURING INSPECTION): Carts placed right above the onions in the warehouse area. Removed at this time.
Corrective Action(s): Do not place cleaning equipment/tools or any non food items directly above foods.

Observation: Rodent droppings observed from floor in the warehouse area.
Corrective Action(s): Remove all droppings. Remove wooden pallets from the warehouse area for easier monitoring of pest activity.

Observation: Warehouse area requires reorganization and cleaning throughout. Food debris observed on floor by the dishwashing area.
Corrective Action(s): Ensure the following work is complete:
- remove all wooden pallets and replace with proper storage units, for easier cleaning of floors underneath.
- have the warehouse area decluttered and cleaned.
- remove any unnecessary items from this area.

Observation: Accumulation of food debris, grease build-up and dust observed on floors throughout the facility. Walk-in cooler in warehouse area requires reorganization.
Corrective Action(s): MAJOR CLEANING is required for the facility. Remove all debris from floors under/behind large equipment. Clean the warehouse area. Remove all wooden pallets. Reorganize walk-in cooler in the warehouse area.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-Temperature monitoring system in place.
-Cleaning log kept on site. Recent logs not available at this time.
-200ppm chlorine solution available in buckets throughout. Ensure to add 1/2 tsp of bleach per 1L of water to prepare the correct concentration of solution.
-High temperature dishwasher achieved 83.1'C at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-Traps in place. Professional pest control company contracted for monthly visits. Reports kept on site.
-Upstairs storage checked at this time. No foods stored in this area.
-Washroom handsinks satisfactory.

NOTE: Cleaning logs should be continued.

General sanitation level of the facility must improve as mentioned above. Follow-up inspection to be conducted on Wednesday, September 4, 2019. Please contact the health inspector for any questions or clarifications.
