Observation (CORRECTED DURING INSPECTION): No sanitizer being used in the kitchen.
Sanitizer at the front reads 100ppm.
Additional Lysol, Quat based sanitizer available for mixing.
Corrective Action(s): Ensure sanitizer reads at least 200ppm Quats.
Kitchen sanitizers should be unscented.
Operator refilling at the time of inspection.

Observation: Dishwasher reads 0ppm chlorine.
Final rinse water appears to have grey scum.
Facility only has single use take out containers.
Facility has large enough sinks to submerge dishes in sanitizer.
Corrective Action(s): Check and ensure both detergent and sanitizer are dispensing properly.
Ensure Dishwasher reads 50-100ppm chlorine.
Use sinks for dishwashing and sanitizing until dishwasher is fixed.

Observation: Some isolated rat droppings around dishwasher, mop sink and underneath rack of flour.
All food is protected and covered.
Operator unsure if droppings are old or new.
Alley between this facility and the next has some debris and vegetation build up.
Corrective Action(s): 1. Clean all droppings to see if they reappear.
2. Remove all standing water in mop sink area, dishwasher, kitchen, etc.
3. Thoroughly clean all floors with cleaner/sanitizer daily. Ensure all food is protected and covered. Ensure no food debris.
4. Install rodent traps. Follow up with pest control contractor.

Observation: Walk in cooler and freezer has peeling paint, some mold specs on various parts surfaces. Oiled/stained wood in freezer.
Items inside are covered and protected from contaimination.
Corrective Action(s): All food storage areas must be made of easily cleanable material that durable and non-porous.
Thoroughly scrape and wipe down walls, ceilings, floors in walk in cooler and freezer.
Paint or install cleanable, durable panels (not wood) on the inside.
Ensure that there is no mold growth anywhere.
