Comments

The following items have been observed:
-->Wiping rags are noted inside sanitizer containers - at least 100ppm chlorine in containers
-->Soft serve machine is not in use

Note:
1. Operator is waiting for head office to test soft serve product and see whether or not product is potentially hazardous food. In order to be considered as non-potentially hazardous, a sample must be taken to lab and tested for pH and water activity (Aw). pH must be less than 4.6 and/or water activity (Aw) less than 0.85.
2. While waiting for machine to be fixed/adjusted, operator can test out products but CANNOT offer/serve product to customers.
3. Facility cannot use soft serve machine until written approval is given from Fraser Health Authority.
4. Operator can submit updated food safety plan for us to review whether or not using ice to keep product cold is a viable option. Use of ice is only considered within a 2-3 day period, not weeks. As mentioned, written approval is required prior to commencement of this option.
