Observation (CORRECTED DURING INSPECTION): Turkey gravy stored in the steamer turned off was measured at 49.9C. Operator said it was left there for an hour but no temperature record. Gravy is used as backup when the station in the front runs low.
Corrective Action(s): Gravy discarded. Do not leave potentially hazardous food such as gravy in steamer turned off. Gravy should be cooled down, stored in cooler and reheated to 74C before use OR maintained at 60C or hotter after cooked.

Observation (CORRECTED DURING INSPECTION): Operator informed that manual warewashing means wash with soap, rinse with water and dips in sanitizer for 2 seconds before air dry.
Corrective Action(s): Food contact surfaces including equipment and utensils should be in contact with sanitizer for 2 minutes to be effective. Follow FHA sign on the wall.

Observation: Lots of mice droppings found by condiment cooler in the front. No hole identified and no apparent signs of pest in the back of the kitchen at time of inspection.
Corrective Action(s): Remove mice droppings, clean and sanitize the area. Monitor for pest activity and inform pest control company of finding.
