*Hole observed in wall between dishwashing area and server station. Chef stated work has been going on to figure out source of leak in wall. Ensure to seal hole after source of leak has been resolved.
- All hand washing sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher registered 100 ppm chlorine at dish surface after rinse cycle
- Glasswasher registered 25 ppm iodine at glass surface
- Test strips available for use
- Quats sanitizer solution available at 200 ppm in buckets, solution is changed every 2 hours. *Ensure sanitizer level is filled up enough to completely submerge wiping cloths.
- All coolers were measured to be at or below 4C
- Freezer temperatures satisfactory
- Accurate thermometers available
- All hot held food items were at 60C or hotter
- Food storage practices good - all food stored off the floor and properly covered/protected from contamination
- No signs of pest activity noted at time of inspection
- General sanitation good. All equipment maintained in sanitary conditions.
- Temperature records well maintained and up to date
