- handsinks stocked with soap, paper towels and hot and cold running water
- low-temperature dishwasher dispensed 50 ppm chlorine at the final rinse cycle
- sanitizer measured 200 ppm quats in several sani-buckets
- pest control in monthly
- vent hood baffles are clean
- foods date-labelled
- sauces by the grill side and Portuguese tarts are time stamped
- reminder that foods must be discarded in 2 hours if the ambient temperature is 24C or above
- foods may be held at room temperature for 4 hours if the ambient temperature is 23C and below
- operator stated that they are considering storing the Portuguese tarts in the cooler instead
