All freezers measured at or below 0F. Temperature monitoring log maintained and kept updated. - QUAT 200-400 ppm available in spray bottles. Test strips available. Dishware washing discussed with the operator. - General sanitation is satisfactory. Floor noted clean and free of food debris and build ups. - Knives, tongues and other utensil noted clean and well maintained. - No sign of pest activity at this date. - Lighting observed adequate.
