Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at 4 degrees C.
Preparation cooler inserts (2) at or below 4 degrees C. Lower sections at or below 4 degrees C.
Hot holding above 60 degrees C.
Back 3 freezers at ~ -15 degrees C. Monitor and ensure -18 degrees C. Reminder to monitor and record temperatures of all coolers, freezers, and hot holding. Have records available for review.
