Observation (CORRECTED DURING INSPECTION): High temperature dishwasher not achieving the minimum temperature required. Facility does not use reusable plates/utensils when serving food. 200ppm chlorine solution prepared in two comp sink at this time for manual dishwashing.
Corrective Action(s): Until the dishwasher is repaired, have all dishes manually sanitized by soaking in 200ppm chlorine solution for at least 30 sec and air dried.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at 4'C; Freezers operating at -18'C.
- Hot-holding unit operating above 60'C.
- Temperature monitoring system in place.
- 200ppm chlorine solution available in labelled spray bottles.
NOTE: Ensure all staff are trained regarding the importance of using the sanitizer.
- General food storage practice very good throughout.
- General sanitation level of the facility very good at this time.
- Professional pest control company contracted. Traps in place.
