Observation (CORRECTED DURING INSPECTION): Sushi bar cooler and food product inside noted between 6 and 9 C. Doors possibly left open. Compressor unit very dusty and dirty.
Corrective Action(s): Monitor unit and service if necessary. Must maintain 4 C or less, and should be closer to 0 C due to nature of foods stored inside. Clean compressor unit, motor, and area surrounding unit. Will review at follow up inspection date noted.

Observation: Raw proteins stored directly above cooked or ready to eat foods in many of the cooler units. Discussed.
Corrective Action(s): Re-organized cooling units so raw proteins are stored below ready to eat foods or in alternate storage areas in cooler units.
Review at re-inspection date noted.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Extensive use of cardboard barrier in multiple food storage areas including coolers as means to avoid cleaning. Cardboard is not an acceptable surface and does not promote easy cleaning, and as such could be a source of contamination of food or food containers.
Corrective Action(s): Discontinue the use of cardboard as surface barrier. An exception is allowed for the deep fry station, as long as cardboard changed daily and is not used as a direct or indirect food contact surface. Review at follow up inspection date noted on report.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Cupboard/cabinetry space below sushi bar sink/counter and surrounding sections significantly deteriorated. MDF is rotted, flaking and the unit is falling apart.
Black carbon and possibly mould is building up in these areas. Dust and cobweb accumulations significant.
Pictures taken of this area.
Corrective Action(s): Immediately clean up this area and remove any equipment, utensils and/or food containers from these areas. Clean up the entire sushi bar area. To be reviewed at follow up inspection date noted on report.
Develop a plan to repair and/or replace structure to allow this space useable for food prep activities. Have plan to this office within 30 days.

**sanitizer in spray bottle should be available for front and back areas and should only contain 1/2 teaspoon of bleach to 750 to 10000 ml of water for 100 ppm. Make sure to label bottles and follow instructions to fill in proper manner.

Handwash stations adequately functional.
